This is a Pink Bourbon selection from a region we worked in more extensively in the past. Rica Brisa in Tarqui has always been a bit mysterious, and it is exciting to bring a lot from this special place back to the menu. In the cup we find raspberry jam, Key lime, and caramel apple.

Hand-picked at peak ripeness. Held in-cherry for 24 hours. Floated. De-pulped. Dry-fermented for 36 hours. Dried on raised beds for 20 days until moisture content reaches ~10%.

ABOUT ALBERTO TRUJILLO

Alberto Trujillo works alongside his extended family in Tarqui, in central Huila. We purchased several lots from this region in the past, but over the years it has become increasingly difficult to source coffee there. The area is challenging to access and offers less varietal diversity than other parts of Huila. We are excited to bring a coffee from Tarqui back to the menu and hope this marks the beginning of renewed work in this unique place.

ABOUT PINK BOURBON

Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
